30 Semi-Healthy Days – Day 16: Almond Milk Mocha Frappuccino

My Starbucks addiction continues with a homemade frappuccino that I actually really did make an attempt at doing a lighter version of that I think turned out perfectly. This is cool, refreshing and delicious and I would have one every day if I weren’t too lazy to clean the blender regularly.

It is really the bane of my existence to get out either the blender or my stand mixer. The state of the cupboards in our kitchen is so precarious that things often come tumbling out at me when I open the doors, and there are a couple of items that just cause complete mayhem when I take them out. The blender is wedged into a cupboard that also has all of our pots and pans as well as the lids to those pots and pans and some other random dishes. The blender is perfectly positioned so that when I remove it from the cupboard, literally everything else in the cupboard falls out of place. There will be lids spread out across the kitchen floor, and the whole place basically turns into a battlefield. It causes so much loud clanging and takes so long to put everything back to its rightful place that I would almost rather just never have a smoothie again. I made an exception for this frappuccino though. It was worth the disaster.

Almond Milk Mocha Frappuccino
1 cup cold coffee (I just used leftover coffee from the morning)
1 Tablespoon instance espresso (if you want a stronger coffee flavor)
1 cup chocolate almond milk
Squeeze of chocolate syrup
1 Tablespoon honey
2 cups ice (more as needed)
1/4 cup coconut milk, optional

Combine the coffee, espresso, almond milk, chocolate syrup, honey and ice in a blender until smooth.

Add more ice if needed.

Put the coconut milk in a sealed mason jar and shake for 30 seconds until foamy. Pour over the top of the frappuccino. I added the coconut milk for some extra flavor because I love coconut, but it is good without it as well.
