30 Semi-Healthy Days – Day 18: Fruit Kabobs

My mom and I both have this giant Weber’s grilling book, and I remember her making some grilled pineapple and ice cream with an orange glaze once that was so delicious that I decided to try it out on my own. It has always stood out in my mind as one of my favourite desserts, but I wanted to change it up a little bit by turning it into fruit kabobs instead of just focusing on the pineapple. It was just as delicious as I remember, and you could make this recipe with any number of different fruits. It’s healthy (if you ignore the ice cream) and delicious!

I have a confession to make though…I ate this for breakfast this morning. I skewered the fruit last night with plans to make them after dinner, and then I completely forgot about it until this morning. Sometimes you just have to take one for the team and eat ice cream for breakfast so that you can write a blog entry before getting on a flight to Houston for the weekend. It’s a dirty job, but someone’s gotta do it.

Fruit Kabobs
1/2 cup orange juice
1 Tablespoon maple syrup or honey
Juice of 1 lime
2 teaspoons corn starch
Fruit cut into large chunks (I used 1/2 pineapple, 2 peaches and 2 plums to get 5 skewers)
Skewers
Fresh ground black pepper
Vanilla ice cream

Combine the orange juice, maple syrup, lime juice and corn starch in a small saucepan over medium-low heat.

Bring to a boil and reduce to a simmer, stirring constantly until thickened, about 3 minutes). Set aside.

Cut fruit into large chunk and put on skewers. Season with some fresh ground black pepper.

Grill over indirect heat or use a grill pan over medium heat with a small amount of flaxseed or olive oil brushed on it.

Turn until all sides have grill marks (about 2 minutes per side).

Serve with vanilla ice cream and topped with the orange juice glaze.
