30 Semi-Healthy Days – Day 20: Avocado Toast with Tomatoes & Caramelized Onions

Can you believe it’s day 20!? I thought we would never hit the 20s! I decided to celebrate with one of my favourite foods in the world: avocado. You know, my husband said to me the other day that he can “take or leave avocado”.  Needless to say, I scoffed and snorted very loudly in response to that comment. I could sit and eat just plain, whole avocados for breakfast, lunch and dinner with the occasional piece of pie thrown into the mix and be perfectly happy. I never really ate them when I was growing up, which I imagine is probably due to a lack of avocados in southern Ontario when I was a kid. Then when I was first introduced to avocados, I didn’t really care for them because of the texture. I thought that all hope for a love affair between me and avocados was lost until I first tried guacamole. After that, things escalated quickly.

I have been seeing recipes for avocado toast of all variations all over the place lately, and I am very taken with the idea. It’s so simple and delicious, and you can put pretty much anything with it. It really is the perfect lunch! This particular take on avocado toast came about because it is what I had in my fridge. All you have to do is smash up an avocado, caramelize some onions and tomatoes, toast some bread and then put it all together with a little bit of arugula! It took me about 10 minutes total to make.

Avocado Toast with Tomatoes & Caramelized Onions
1 avocado
Pinch of salt & pepper
1 Tablespoon lime juice
1 Tablespoon olive oil
1/4 cup sliced yellow onion (about 1/4 of an onion)
1/4 cup cherry tomatoes, halved
1 Tablespoon tarragon vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
Arugula, for serving
Sliced french bread or just regular bread

Remove the pit from the avocado and use a fork to mash it up in a bowl with a little bit of salt & pepper and the lime juice. 

Heat oil in a pan over medium-low heat.

Add sliced onion and cook, stirring occasionally, for about 5 minutes.

Add tomatoes, vinegar, salt & pepper and continue to cook for another 3 – 5 minutes until onions are caramelized.

Toast your bread (or have it untoasted), and spread the mashed avocado over it.

Top with some arugula and the caramelized onion mixture.
