30 Semi-Healthy Days – Day 21: No Bake Chocolate Peanut Butter Cookies

SOOOOO GOOOOOOOOOD!!!! That is what you will say when you eat one of these no bake chocolate peanut butter cookies. I could have eaten the entire batch of these in one sitting if my husband wouldn’t judge me for it (shame on him). Everything about these cookies is amazing. They are insanely easy to make (you really can’t screw them up since there is no baking involved), and they taste like chocolatey, peanut buttery, coconuty goodness. I just want to made a sandwich out of them where I sandwich one of the cookies between two other cookies and just eat three at one time. 

I left coconut out of the title because at a certain point, the length of a recipe name becomes unruly but be warned that these also have coconut. You could leave out the coconut if you are not a fan (ridiculous), and you could also add in any assortment of nuts and other goodies. These would even be great with some dried cranberries mixed in! I also made these vegan by using dairy-free chocolate and almond milk, but you could use any type of chocolate or milk you like. The possibilities are really endless, and they only take about 15 minutes to make plus 1 hour in the fridge (or 10 minutes in the freezer if you are as impatient as I am). Just trust me, and make these right now.

No Bake Chocolate Peanut Butter Cookies
1 cup sugar
2 ounces unsweetened bakers chocolate
1 cup vanilla almond milk
1 cup peanut butter
3 cups quick-cooking oats
1 1/2 cups unsweetened shredded coconut

Combine the sugar, chocolate and almond milk in a small saucepan over medium-low heat.

Cook, whisking constantly until the chocolate is melted.

Bring to a low boil and continue to cook for another minute, stirring constantly.

Remove from the heat and add in the peanut butter. Stir until smooth.

Combine with the oats and coconut in a large bowl.

Scoop into balls whatever size you like on a wax paper-lined baking sheet. Refrigerate for 1 hour.
