30 Semi-Healthy Days – Day 22: Sweet Potato & Soy Chorizo Scramble

Every time I make something that has sweet potatoes in it, my husband makes a comment like, “you sure like sweet potatoes”, which tells me that he doesn’t really like sweet potatoes. Then when I point that out, he back tracks and says, “but they’re good the way that you make them”. It makes total sense that sweet potatoes are only good when I make them so I just go with that because I want to continue to make things with sweet potatoes. I just love them so much. It’s another one of those foods that I never liked as a kid but has just really grown on me in recent years, and I could probably have sweet potatoes with just about every meal and be perfectly happy. I especially love them in tacos! 

This scramble came about because I had some soy chorizo in the fridge that I wanted to use up, and I am also a big fan of breakfast for dinner. That usually means that I want pancakes for dinner, but because I have a husband who judges me for these things, I went with a scramble instead. I am not really an egg person, but if you throw in rosemary sweet potatoes and soy chorizo, I am fully on board. Soy chorizo is probably the best meat substitute I have had, and it’s really the only one that I think actually tastes better than the real thing. Chorizo is all about the spice, and soy chorizo gets it right. This scramble is super easy to make, and it is delicious so get after it! This recipe made enough for 2 people, but you can increase the eggs to serve more.

Sweet Potato & Soy Chorizo Scramble (serves 2)
1 Tablespoon olive oil
1 sweet potato, peeled & cubed
2 Tablespoons fresh rosemary, chopped
1 clove garlic, minced
1/2 teaspoon fresh ground black pepper
1/2 teaspoon red pepper flakes
1 teaspoon salt (the chorizo is salty as well so you can cut this out if you want)
6 eggs, beaten
1 Tablespoon butter
Green onions, extra rosemary, avocado, for serving

Heat olive oil in a skillet over medium heat.

Add sweet potato, rosemary, garlic, black pepper, red pepper flakes and salt and saute until sweet potatoes are soft when poked with a fork (about 15 minutes).

Add the soy chorizo and cook for an additional 5 minutes.

In a separate pan, melt the butter over medium heat. Add eggs and scramble until they reach the consistency you like.

Combine the eggs and the sweet potato mixture.

Serve with fresh sliced green onions, chopped rosemary and avocado.
