30 Semi-Healthy Days – Day 29: Pineapple Mint Refresher

My husband likes to mix up drinks and cocktails of all kinds, and I am always happy to try them out. This blog entry is admittedly about a drink that he concocted for me so I didn’t technically make this myself (oops). This is the perfect, refreshing drink for a hot day. I love the combination of pineapple and mint, and we came across this pomegranate apple cider vinegar drink at Sprouts that adds the perfect amount of tangy, bitterness to the drink. They had all different flavors of the apple cider vinegar drinks, and I have seen them around at plenty of grocery stores because it’s apparently a thing to drink apple cider vinegar for health reasons these days. 

This version is nonalcoholic, but it would go perfectly well with a little bit of gin or vodka for a summery cocktail. The best part about this drink is that it was an excuse for me to buy a pineapple so now I’m just going to snack on pineapple for the rest of the night. It is, after all, the best fruit of them all. I made sure to tell my husband to put at least four pineapple chunks in my drink because my favourite part of a cocktail is getting to the bottom of it and eating any of the good stuff that might be in it (usually a cherry of some sort).

Pineapple Mint Refresher
1 teaspoon sugar
Water
3 – 4 mint leaves
1/4 cup pineapple chunks
1 ounce pomegranate apple cider vinegar
1/2 cup ice
2 ounces Pellegrino or other fizzy water
Extra pineapple and mint for garnish

Add sugar and just enough water to cover the sugar to a shaker. Add the mint leaves and pineapple muddle until well crushed.

Add the apple cider vinegar and ice and shake until well combined.

Add some crushed ice and pineapple chunks to a glass. Pour the pineapple mint mixture over the ice.

Add pellegrino and garnish with a mint leaf.
