Bailey’s Mint Martinis

DSC_6291_2.jpgHappy Saint Patricks Day! It’s one day early, but it’s on a Monday so that blows. My husband and I celebrated by having these martinis and homemade pizza last night. There is this incredible pizza place in Little Italy here in San Diego called Filippi’s, and you can just walk in and buy raw pizza dough for about 3 bucks. AMAZING! So we bought some dough and then went to the farmer’s market down the street for fresh mozzarella and basil. It was the perfect meal.

The only problem was that my pizza stone started smoking like nobody’s business when I was heating up the oven. We needed to take it out of the oven so Kevin’s idea was to hold the vacuum next to the oven so that when he opened the door I could “suck up all of the smoke”. Yeah…that didn’t work.

The only thing better than homemade pizza is homemade pizza and martinis. My favourite kind of alcohol is something that doesn’t actually taste like alcohol (i.e. Bailey’s, Amaretto, Kahlua). Either that or anything with a pound of maraschino cherries in it. My husband made this up so I can’t really take the credit, but I needed a holiday post so I’m stealing it. We thought last minute that this would have been even better if we could have somehow put crushed thin mints around the rim so next time! 

One of the ingredients in these martinis is the toffee almond creamer by Bailey’s. I promise you, this is the most delicious thing you will ever put in your coffee. We only recently discovered that it is also awesome in alcohol. I put this in my coffee every day when I lived in San Antonio, but then when I moved to San Diego I couldn’t find it. Every time I went to any grocery store I looked for it for about 6 months until one miraculous day it showed up in the Ralph’s down the street from me with a sign saying that it was “new”. I saw it when I stopped on my way to work on morning and had to call my husband to tell him that he needed to pick up a lifetime supply of it for me on his way home that day.

1 ounce Baileys
1 ounce amaretto
1/2 ounce creme de menthe
1/2 ounce Bailey’s toffee almond creamer
1/2 ounce Irish whiskey

Shake with ice and serve in a martini glass!
