Banana Bread 3 Ways

I tend to buy bananas, forget about them and then put them in the freezer to use for baking when they get too ripe. The problem is that this happens on an almost weekly basis so when I opened my freezer the other day, bananas just came tumbling out onto me. It was like one of those cartoons where everything comes crashing out of a closet when it is opened (this is also true of my closet). It scared the cat so much that I didn’t see him for the rest of the day. I decided that it was high time to make some banana bread, and I thought I would have some fun with it by trying out a few different kinds.

I took just a basic banana bread recipe and made a few alterations to it to get three different types: (1) Coconut, (2) Chocolate chunk and (3) Maple-Bourbon. I bought a pack of three of the little disposable aluminum loaf pans to use. I made each recipe separately and then baked them all at the same time on a sheet pan. The only issue I ran into was that the coconut one ended up a little too full, and it spilled over the top. Other than that, I have three delicious loaves of banana bread! I am keeping two of them in the freezer for a rainy day.

Coconut Banana Bread:
1/2 cup butter (1 stick)
1 cup sugar
2 eggs
1 Tablespoon coconut rum
3 – 4 bananas, mashed
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup sweetened, shredded coconut

Preheat oven to 350 degrees F.

Cream together the butter and sugar.

Add the eggs, rum and bananas and combine with a mixer until smooth.

Add the remaining ingredients and mix together by hand until well-combined. Pour into a greased loaf pan and baked at 350 degrees F. for an hour or until toothpick comes out clean.

Chocolate Chunk Banana Bread:
1/2 cup butter (1 stick)
1 cup sugar
2 eggs
1 teaspoon vanilla extract
3 – 4 bananas, mashed
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup coarsely chopped chocolate (or chocolate chips)

Preheat oven to 350 degrees F.

Cream together the butter and sugar.

Add the eggs, vanilla and bananas and combine with a mixer until smooth.

Add the remaining ingredients and mix together by hand until well-combined. Pour into a greased loaf pan and baked at 350 degrees F. for an hour or until toothpick comes out clean.

Maple-Bourbon Banana Bread:
1/2 cup butter (1 stick)
1/2 cup sugar
1/2 brown sugar
2 eggs
1/4 cup maple syrup
1 Tablespoon bourbon
3 – 4 bananas, mashed
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt

Preheat oven to 350 degrees F.

Cream together the butter and sugar.

Add the eggs, bourbon and bananas and combine with a mixer until smooth.

Add the remaining ingredients and mix together by hand until well-combined. Pour into a greased loaf pan and baked at 350 degrees F. for an hour or until toothpick comes out clean.

  3. Add the wet ingredients and combine with a mixer until smooth.
  4. Add the remaining ingredients and mix together by hand until well-combined. Pour into a greased loaf pan and baked at 350 degrees F. for an hour or until toothpick comes out clean.

  • How much maple syrup did you use ? I see the picture of the syrup but it’s not listed as an ingredient .

    • You’re right, I completely missed including it in the recipe! I have updated the recipe, and I used 1/4 cup.
