BLT Pasta Salad

Bacon is one of my favourite foods ever, but I hardly ever make it because the smell and the grease just seem to linger too long in my little apartment. I made that mahi mahi recipe last week, and I needed bacon for it so now I’ve got a whole package of bacon that I need to use up. I was browsing through some magazines looking for recipes that involved bacon when I came across this one in Cuisine at Home. I love a good pasta salad because it makes enough to feed a million people so I’ll have leftovers for a while, and it’s just a really good, quick meal to make. I eat a lot of salads when I am on my own because I genuinely love salad, and it is one of the easiest things to put together. Pasta salad is a nice change of pace though because I was getting a little bit tired of Caesar.

I made a couple of little changes to the recipe from the magazine so the one below is my adapted version. This is really really good, but I probably should have cut it in half. I didn’t really think about the fact that it’s got lettuce in it too so it probably won’t be great for a long time. It’s really delicious and colourful though, and who doesn’t love BLT’s? I love that there are so many different recipes for transforming BLT’s into something else. I have a lot of them on my endless list of things to make in the future.
BLT Pasta Salad
1 lb. coloured bow tie pasta (the bag I bought was just called garden bow tie pasta)
4 strips thick-sliced bacon, diced
1/2 cup mayonnaise
1 teaspoon Dijon mustard
2 tablespoons minced shallots
2 tablespoons minced fresh basil
2 tablespoons cider vinegar
3 teaspoons sugar
Salt and pepper to taste
3 cups chopped Romaine lettuce
2 cups halved salad tomatoes

Cook pasta in a large pot of boiling, salted water according to package directions.
Transfer the pasta to a strainer, and rest the strainer in an ice bath to stop the cooking; drain well.
Cook bacon in a large, nonstick skillet over medium heat until crisp. I love bacon to be so crispy that it is nearly burnt so I left mine in for quite a while. Transfer bacon to a plate lined with paper towel and reserve 3 tablespoons of the drippings; set aside to cool.
Whisk together mayonnaise, mustard, shallots, basil, vinegar, and sugar in a large bowl. Season with salt and pepper.
Stir in pasta, lettuce, tomatoes, and bacon. Toss to coat in the dressing and season the salad with salt and pepper.
