Chocolate Almond Cherry Crisps

I am all alone in San Antonio for a few weeks right now, and I have just been spending my days studying for the next CPA exam, cross stitching, and watching wedding shows. It would be an understatement to say that I am doing a lot of snacking. I have at least started trying to do those insanity workouts from the DVDs a little bit every day…trying being the operative word there. I eat when I’m bored so, knowing this about myself, I bought a whole bunch of healthy snacks to feed my habit (that pun was intended). Unfortunately, I am three days in and my sweet tooth has kicked in.

These chocolate things are from the Cooking Light website. It amuses me what passes for light cooking for that magazine because these are like 90% chocolate so I’m not sure what’s healthy about them. They are really good though, and they freeze really well so I don’t have to eat them all at once (although I probably will). This is genuinely the quickest and easiest thing that I have ever made, and they are so so good.
Chocolate Almond Cherry Crisps
1 cup semisweet chocolate chips
1 cup white chocolate chips
1 1/2 cup Rice Krispies
3/4 cup dried cherries (I bought the Ocean Spray dried cherries)
1/3 cup slivered almonds
1/2 teaspoon vanilla

Cover a cookie sheet with wax paper. Put all of the chocolate chips into a microwave safe bowl and microwave for 1 minute. Remove and stir the chocolate chips, then microwave for another 30 seconds. Stir until melted and combined.

Add the remaining ingredients and mix everything together with a spoon.
Spoon tablespoonfuls onto the wax paper-covered cookie sheet and refrigerate for 45 minutes to an hour or until firm.
