Chocolate Chip Cookie Ice Cream Sandwiches

My husband and I have a problem…an ice cream problem. I don’t go to the grocery store intending to buy ice cream, but I always come home with some sort of ice cream treat. We eat ice cream after dinner almost every night..it’s like a disease. One of the contributions to this issue recently were these delicious little chocolate chip cookie ice cream sandwiches that I stumbled upon in Trader Joe’s. Even the girl at the checkout praised these things because they were so good. I decided that I had to try making them myself!

I brought these to a barbeque for Memorial Day this past Monday, and they were a big hit! The travel was a little bit problematic because they melt so much, but we just threw some ice packs on top of the container, and all was well. Let me preface this by saying that I did not make homemade vanilla ice cream, unfortunately. I had big plans to do it, and then I just didn’t have the time or the patience. Either way, these are delicious. I used my regular chocolate chip cookie recipe, which has been on this site several times before but I will include it below so you don’t have to jump around between entries.
Chocolate Chip Cookie Ice Cream Sandwiches
1 cup shortening
1 cup sugar
1/2 cup packed brown sugar
2 eggs
2 teaspoons vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon salt (this is what makes this recipe so delicious)
1 package semi-sweet chocolate chips
2 containers vanilla bean ice cream
1 package mini chocolate chips

Preheat oven to 375 degrees F.

Combine the shortening, sugar, and brown sugar and cream with a wooden spoon or hand mixer.

Add the eggs and vanilla, stirring until well-combined.

Add the dry ingredients and mix until a cookie dough forms. Then add the chocolate chips and mix until they are evenly distributed throughout the dough.

Drop by the tablespoonful onto a cookie sheet and bake for 8 to 10 minutes or until golden brown. I removed them a little bit early so they would be soft for the ice cream sandwiches.
Assemble the Ice Cream Sandwiches
Let the vanilla ice cream soften slightly out on the counter before you put the sandwiches together. I did about one and a half large scoops for each sandwich.

Lay the mini chocolate chips out on a plate or shallow dish and roll each sandwich until the outside is coated with them and voila!
