Cilantro Lime Grilled Pork Chops

Here is my very own creation of the week! This is only week two of inventing my own recipes from scratch, but I am pretty proud of how well it’s going so far. I realize that cilantro lime grilled pork chops are not the most original or difficult things in the world, but they are delicious and a good start if I do say so myself. It is hard to go wrong with cilantro and lime, but this marinade is especially yummy. I decided to splurge and buy the thick-cut boneless pork chops instead of the ones that are so thin you can practically see through them. I just did these on a grill pan, and they were cooked perfectly (thanks to my fiance). You could do these on an outdoor grill just as easily if you don’t live in an apartment with strict balcony fire hazard rules like I do.

There are all kinds of things that you could serve with these, but I decided to go with coleslaw and watermelon because it has been a while since I have had either of those things. Some other options might be some roasted red potatoes and green beans. I bought the lettuce/cabbage for the coleslaw in a bag-mix, but I decided to make my own dressing and add a couple of things. My mom added blue cheese and peanuts to some coleslaw once on a whim, and it turned out to be the best thing ever so that is my favourite thing to do now.
Cilantro Lime Grilled Pork Chops
Juice of 3 limes
1 handful fresh cilantro
1/4 cup olive oil
1 clove garlic
1/4 teaspoon cayenne pepper
2 Tablespoons lowfat Greek yogurt
Salt and pepper, to taste
4 thick-cut boneless pork chops, trimmed

Put the lime juice, cilantro, oil, garlic, cayenne, yogurt, salt, and pepper into a blender.
Combine into a smooth marinade. If you don’t have a blender, just mince the garlic and the cilantro then whisk everything together in a small bowl.
Pour about half of the marinade into a ziploc with the pork chops and marinate for about 2 hours in the fridge. Put the rest of the marinade into a container and store in the fridge for extra sauce to serve with the pork chops.
Heat a grill pan over medium heat and coat with cooking spray. Cook pork chops for about 5 minutes per side or until done. Serve with remaining sauce.
