Crock Pot Chicken Caesar Sandwiches

I saw this recipe on a blog called The Girl Who Ate Everything, and I nearly lost my mind with excitement. There is nothing that I enjoy more than a caesar salad, and I will pretty much always order any variation of that on a menu at a restaurant. There is a chicken caesar sandwich on the menu at La Madeleine (the cutest place ever), and it is genuinely the most delicious sandwich that I have ever had at a restaurant. They took it off of their menu for a few devastating months before bringing it back (most likely because I cried every time I went in and couldn’t order it).

I was particularly excited about this recipe because it uses Brianna’s Asiago Caesar dressing, which just happens to be my favourite kind of salad dressing. I always have a bottle of it in my fridge. These sandwiches are beyond easy to make, and they are perfect for a weeknight since you can just leave the chicken cooking for the day. If you don’t have a crockpot, I am sure you could just make it in a Dutch oven or other large pot. The original recipe is just on hamburger buns, but HEB sometimes has these mini Ciabatta rolls that I love so I decided to use those. This is most definitely going to be a go-to recipe for me in the future. SO GOOD!
Crock Pot Chicken Caesar Sandwiches
2 lbs. boneless, skinless chicken breasts
1/2 to 1 cup of your favourite Caesar dressing (I highly recommend using Brianna’s Asiago Caesar)
1/2 cup shredded Parmesan cheese
1/4 cup fresh chopped parsley or 2 tsps. dried parsley
1/2 tsp. ground pepper
Shredded romaine lettuce
4 -6 hamburger buns, Ciabatta rolls, or any other type of sandwich roll that you want to use

Place chicken in a 3-4 quart slow cooker with 1-2 cups of water. Cover and cook on low heat for 4-6 hours. Remove chicken from cooker using a slotted spoon and drain the water from the crock pot. Place chicken on a cutting boart and shred with two forks.
Place chicken back in crock pot and pour dressing, cheese, parsley, and pepper over the top. Stir until mixed evenly.
Cover and cook on high heat for 30 minutes or until mixture is hot (this is also delicious when eaten cold). Spoon mixture onto each bun and top with extra Parmesan cheese and lettuce to serve.

  1. Place chicken in a 3-4 quart slow cooker with 1-2 cups of water. Cover and cook on low heat for 4-6 hours. Remove chicken from cooker using a slotted spoon and drain the water from the crock pot. Place chicken on a cutting boart and shred with two forks.
  2. Place chicken back in crock pot and pour dressing, cheese, parsley, and pepper over the top. Stir until mixed evenly.
  3. Cover and cook on high heat for 30 minutes or until mixture is hot (this is also delicious when eaten cold). Spoon mixture onto each bun and top with extra Parmesan cheese and lettuce to serve.

  • What kind of fresh parsley did you use or do you think will taste better? Don’t like dried but there are two different kinds of fresh parsley.

    • I usually like to buy flat leaf parsley, but I think that either would be good in this recipe.
