Meatball Flatbread Pizza

DSC_5288_2One of my favourite go-to meals when I don’t really feel like cooking is flatbread pizza. My husband and his family introduced it to me, and it is fantastic. All you do it buy a loaf of ciabatta bread, cut it in half, and add whatever pizza toppings you want. Then you throw it in the oven for 15 to 20 minutes and you have yourself a delicious pizza! It’s always super quick, and we usually just put sauce, pepperoni and cheese on it so there is zero effort involved.

This past weekend I thought that it would be fun to mix super easy with homemade and make my own toppings for a flatbread pizza since I had the time. I made homemade pizza sauce and meatballs and topped the whole thing off with fresh slices of mozzarella cheese and basil leaves. Muah! I like to talk in an Italian accent when I’m cooking (and also when I’m not) so I always enjoy making pizza.

Meatballs, cooked (recipe below)
Fresh mozzarella cheese, sliced
Fresh basil leaves

Preheat oven to 400 degrees F.

Cut the Ciabatta bread in half, lengthwise. Spread pizza sauce over each half and add the meatballs. Top with slices of mozzarella cheese.

Bake for 15 to 20 minutes or until the cheese is melted. Top with the basil leaves immediately after taking it out of the oven and serve.

1 Tablespoon butter
1/2 yellow onion, chopped (or minced if you don’t want chunky pizza sauce)
1 clove garlic, minced
1/4 cup dry white wine
1/2 teaspoon dried oregano
1/4 teaspoon dried marjaram
1/2 teaspoon dried parsley
1/4 teaspoon paprika
1/4 teaspoon red pepper flakes
1/2 teaspoon onion powder
1 can (28 oz) whole tomatoes, in juice
Salt & pepper, to taste

Heat a pan over medium-high heat and melt the butter. Add the onion and saute for 2 minutes or so until starting to soften.

Add the garlic, the wine and all of the spices (oregano through onion powder). Allow most of the wine to cook off before adding the tomatoes (including the juice).

Use a potato masher or a fork to break up the whole tomatoes. You can run the whole thing through a blender if you want the sauce to be smooth, but I left it chunky. Add the salt and pepper. Reduce the heat and simmer for 15 minutes. Adjust seasoning as needed.

1 lb lean ground beef
1/2 cup bread crumbs
1/3 cup milk
2 teaspoons Italian seasoning (I used the same mixture that I used for the pizza sauce above)
1 Tablespoon hot sauce (I used Frank’s red hot)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup shredded Parmesan cheese
1 Tablespoon Worcestershire sauce

Preheat the oven to 400 degrees F.

Combine all ingredients with your hands (be a man!) and roll into meatballs (whatever size you like). I made mine small for the pizza.

Put on a greased baking sheet and bake for 20 minutes or until meat is cooked through.
