Taco Salad

I am determined to start catching up on my blog entries this week! I’ve got a couple of days off for Memorial day weekend, and next week will be a slow week with work. I am excited about everything that I am going to accomplish so I will check back in with you at the end of the week to see whether I actually did any of it. I have at least three blog entries to write, and I have a lot of work to do for the new site I am starting with some of my bestest friends. Our goal is to have the site up and running on June 1st so look forward to that!

Taco salad is one of my husband’s favourite meals so I thought that I needed to try making it. Mine was nowhere near as delicious as his mom’s, but I tried to put my own spin on a taco salad recipe and I think that it turned out pretty fantastic if I do say so myself. It is a super easy meal, and you can make a lot of it so it’s great for a crowd. It is also a fun meal because you can set it up as a taco salad bar on the counter where everyone just creates their own. I just made it for two people, but I like that we have the option of going bigger. Note that I included cottage cheese or sour cream in the recipe below to serve with the salad. You might think that cottage cheese sounds weird, but my husband’s family introduced the combination to me, and it is delicious!
Taco Salad
16 oz lean ground beef
6 green onions, sliced
1 clove garlic, minced
2 teaspoons chili powder
1/2 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
3/4 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1 1/2 teaspoons salt
1 teaspoon black pepper
1 head iceberg lettuce, shredded (I just bought a bad of shredded lettuce because I am lazy)
2 roma tomatoes, chopped (I forgot these, but I think they would improve this salad)
1 orange bell pepper, sliced
1 green bell pepper, sliced
1 bunch of cilantro, chopped
1 package of shredded cheese (any kind you like – we used Cheddar)
Tortilla chips (my husband likes to crush these at the bottom, and I like to use them to scoop up the salad)
Sour cream or cottage cheese
Salsa

Heat a large frying pan over medium-high heat. Add the ground beef to the pan and break up with a wooden spoon. Add the garlic to the pan and continue cooking until the meat is browned, and you can smell the garlic.
Once the meat has been browned, drain off the excess fat and return the pan to the heat. Add about 1/2 inch of water, three sliced green onions, and all of the seasonings (through black pepper). Continue to simmer until the meat is cooked through (about 5 minutes).
Set up your taco salad with all of the additional ingredients however you like in a bowl and serve!
