Three-Cheese Grilled Cheese

DSC_4168_2I don’t think that there is a meal better than grilled cheese and tomato soup (except maybe roast beef made by my mom). It is so comforting, and grilled cheese is nearly impossible to screw up. It’s so easy to make! Last weekend, we had homemade tomato soup with three-cheese grilled cheese on homemade bread. You can’t beat that.

Unfortunately, I did not blog about the bread, but you can find the tomato soup recipe here and the grilled cheese below. There isn’t a lot to say about it other than that it was a very successful meal. It turns out that mixing a clove of garlic into some butter before spreading it on the bread for your grilled cheese is an excellent idea. Do it.

I didn’t really use any amounts for the recipe below since I’m pretty sure you can decide how much cheese you want. This would also be good with pretty much any combination of cheese you like.

Mozzarella cheese, sliced
Provolone cheese, sliced
Muenster cheese, sliced
¼ cup butter, softened
1 clove garlic, minced
Sliced country French bread (or just your favourite bread)

Heat a large pan over medium-high heat.

Combine the butter and the garlic with a spoon in a small dish. Spread on one side of each slice of bread.
DSC_4151_2Put one slice of bread into the hot pan, butter side down. Top with as much cheese as you like while it starts cooking, and top the cheese with the other slice of bread, butter side up.

Cook for 3-4 minutes per side until the cheese is melted and the bread is golden brown.
