I liked the vanilla mint latte that I made yesterday so much that I decided to try out the flavour combination in a smoothie. I used a frozen fruit mix from Trader Joes that included various berries and cherries, but you could really use any frozen berries for this smoothie. It turned out delicious. The mint is a really refreshing pop of flavour, while the vanilla blends very well with the berries. I used unsweetened vanilla almond milk for the liquid, and I didn’t bother with ice since the frozen berries and frozen banana that I used made the smoothie thick enough.
I have always been very skeptical of adding greens to smoothies, but in small doses, you really don’t even notice it. I added about 1 cup of kale to this smoothie to make it a little bit healthier, and I didn’t even notice the taste. I actually ended up with such a deep purple smoothie that you can’t even tell there is anything green in it. Now I have the song Space Truckin by Deep Purple stuck in my head so that’s an added bonus.
I did not add any sweetener to this smoothie because the berry mix was sweet enough, but you could add some honey or a couple of medjool dates to sweeten it.
Vanilla Mint Berry Smoothie
1 cup frozen berries, cherries, etc.
1 banana (I used a frozen banana)
1 teaspoon vanilla extract
A few mint leaves (more or less depending on how minty you want it)
1 cup kale
1 cup unsweetened vanilla almond milk (more or less to get the thickness you want)
Blend all ingredients until smooth and serve!
