30 Semi-Healthy Days - Day 18: Fruit Kabobs

Instructions:

  1. Combine the orange juice, maple syrup, lime juice and corn starch in a small saucepan over medium-low heat.
  2. Bring to a boil and reduce to a simmer, stirring constantly until thickened, about 3 minutes). Set aside.
  3. Cut fruit into large chunk and put on skewers.
  4. Grill over indirect heat or use a grill pan over medium heat with a small amount of flaxseed or olive oil brushed on it.
  5. Turn until all sides have grill marks (about 2 minutes per side).
  6. Serve with vanilla ice cream and topped with the orange juice glaze.
