30 Semi-Healthy Days - Day 18: Fruit Kabobs
Ingredients:
- 1/2 cup orange juice
- 1 Tablespoon maple syrup or honey
- Juice of 1 lime
- 2 teaspoons corn starch
- Fruit cut into large chunks (I used 1/2 pineapple, 2 peaches and 2 plums to get 5 skewers)
- Skewers
- Vanilla ice cream
Instructions:
- Combine the orange juice, maple syrup, lime juice and corn starch in a small saucepan over medium-low heat.
- Bring to a boil and reduce to a simmer, stirring constantly until thickened, about 3 minutes). Set aside.
- Cut fruit into large chunk and put on skewers.
- Grill over indirect heat or use a grill pan over medium heat with a small amount of flaxseed or olive oil brushed on it.
- Turn until all sides have grill marks (about 2 minutes per side).
- Serve with vanilla ice cream and topped with the orange juice glaze.
