30 Semi-Healthy Days - Day 21: No Bake Chocolate Peanut Butter Cookies

Instructions:

  1. Combine the sugar, chocolate and almond milk in a small saucepan over medium-low heat.
  2. Cook, whisking constantly until the chocolate is melted.
  3. Bring to a low boil and continue to cook for another minute, stirring constantly.
  4. Remove from the heat and add in the peanut butter. Stir until smooth.
  5. Combine with the oats and coconut in a large bowl.
  6. Scoop into balls whatever size you like on a wax paper-lined baking sheet. Refrigerate for 1 hour.
