30 Semi-Healthy Days - Day 21: No Bake Chocolate Peanut Butter Cookies
Ingredients:
- No Bake Chocolate Peanut Butter Cookies
- 1 cup sugar
- 2 ounces unsweetened bakers chocolate
- 1 cup vanilla almond milk
- 1 cup peanut butter
- 3 cups quick-cooking oats
- 1 1/2 cups unsweetened shredded coconut
Instructions:
- Combine the sugar, chocolate and almond milk in a small saucepan over medium-low heat.
- Cook, whisking constantly until the chocolate is melted.
- Bring to a low boil and continue to cook for another minute, stirring constantly.
- Remove from the heat and add in the peanut butter. Stir until smooth.
- Combine with the oats and coconut in a large bowl.
- Scoop into balls whatever size you like on a wax paper-lined baking sheet. Refrigerate for 1 hour.
