30 Semi-Healthy Days - Day 22: Sweet Potato & Soy Chorizo Scramble

Instructions:

  1. Heat olive oil in a skillet over medium heat.
  2. Add sweet potato, rosemary, garlic, black pepper, red pepper flakes and salt and saute until sweet potatoes are soft when poked with a fork (about 15 minutes).
  3. Add the soy chorizo and cook for an additional 5 minutes.
  4. In a separate pan, melt the butter over medium heat. Add eggs and scramble until they reach the consistency you like.
  5. Combine the eggs and the sweet potato mixture.
  6. Serve with fresh sliced green onions, chopped rosemary and avocado.
