30 Semi-Healthy Days - Day 22: Sweet Potato & Soy Chorizo Scramble
Ingredients:
- Sweet Potato & Soy Chorizo Scramble (serves 2)
- 1 Tablespoon olive oil
- 1 sweet potato, peeled & cubed
- 2 Tablespoons fresh rosemary, chopped
- 1 clove garlic, minced
- 1/2 teaspoon fresh ground black pepper
- 1/2 teaspoon red pepper flakes
- 1 teaspoon salt (the chorizo is salty as well so you can cut this out if you want)
- 6 eggs, beaten
- 1 Tablespoon butter
- Green onions, extra rosemary, avocado, for serving
Instructions:
- Heat olive oil in a skillet over medium heat.
- Add sweet potato, rosemary, garlic, black pepper, red pepper flakes and salt and saute until sweet potatoes are soft when poked with a fork (about 15 minutes).
- Add the soy chorizo and cook for an additional 5 minutes.
- In a separate pan, melt the butter over medium heat. Add eggs and scramble until they reach the consistency you like.
- Combine the eggs and the sweet potato mixture.
- Serve with fresh sliced green onions, chopped rosemary and avocado.
