30 Semi-Healthy Days - Day 23: White Bean & Kale Soup

Ingredients:

Instructions:

  1. Heat oil in a large saucepot over medium heat.
  2. Add onions and garlic and saute for 2 - 3 minutes.
  3. Add carrots, celery, thyme, oregano and red pepper and cook for another 5 minutes until soft.
  4. Add kale and cook until the kale starts to wilt.
  5. Add the broth and the beans and bring to a boil. Reduce to a simmer for 30 - 40 minutes.
