30 Semi-Healthy Days - Day 9: Vegetarian Baked Beans

Instructions:

  1. Rinse the beans and cover with water in a large pot.
  2. Bring to a boil, then turn off the heat and let soak for about an hour.
  3. Meanwhile, combine the horseradish, soy sauce, vinegar, mustard, brown sugar, BBQ sauce, red pepper flakes and salt & pepper with a whisk.
  4. Drain the beans and add to a slow cooker. Top with the chopped onion and minced garlic.
  5. Pour the sauce over everything in the crock pot and cook on low for 7 hours.
