Almond Milk Latte with Vanilla Bean Maple Syrup

  1. Vanilla Bean Maple Simple Syrup:
  2. Cut the vanilla bean down the middle and scrape out the seeds.
  3. Crush the cardamom pods slightly with the back of a spoon.
  4. Combine the vanilla bean, vanilla seeds, cardamom pods, sugar, water and maple syrup in a medium saucepan.
  5. Bring to a boil over medium heat, stirring frequently to ensure the sugar dissolves without burning.
  6. Continue cooking for about 5 minutes. Remove from heat and let cool.
  7. Strain the simple syrup to remove the vanilla bean and cardamom pods. Store in the fridge for up to 2 weeks.
  8. Almond milk latte:
  9. Heat the almond milk in the microwave for 1 1/2 minutes.
  10. Froth the milk with a milk frother. If you don't have a milk frother, pour cold almond milk into a mason jar and seal. Shake as hard as you can for 30 seconds. Remove the lid and microwave for another 30 seconds.
  11. Pour the frothed almond milk over hot coffee or espresso. Stir in the syrup.
