Almond Milk Latte with Vanilla Mint Syrup

  1. Combine the sugar, water and mint leaves in a small saucepan over medium-low heat.
  2. Scrape out the vanilla bean and add the bean and seeds to the saucepan.
  3. Bring to a boil, stirring regularly until the sugar is dissolved.
  4. Remove from heat and let cool before transferring to a sealed container to store. It will keep in the fridge for up to a month.
  5. Pour the coffee or espresso into a mug and add 1 teaspoon of the vanilla-mint syrup.
  6. Steam the almond milk either in the microwave or a small saucepan, making sure that you do not let it come all the way to a boil as this will change the texture.
  7. Froth the steamed almond milk with a milk frother or by shaking it vigorously in a sealed container like a mason jar. Pour over the coffee and serve. Top with whipped cream or coconut whipped cream for a vegan option.
