Almond Milk Latte with Vanilla Mint Syrup
Ingredients:
- 1 cup sugar
- 1 cup water
- 1/4 cup mint leaves
- 1 vanilla bean
- 3/4 cup strong-brewed coffee or espresso
- 3/4 cup almond milk
- Whipped cream, optional for serving
Instructions:
- Combine the sugar, water and mint leaves in a small saucepan over medium-low heat.
- Scrape out the vanilla bean and add the bean and seeds to the saucepan.
- Bring to a boil, stirring regularly until the sugar is dissolved.
- Remove from heat and let cool before transferring to a sealed container to store. It will keep in the fridge for up to a month.
- Pour the coffee or espresso into a mug and add 1 teaspoon of the vanilla-mint syrup.
- Steam the almond milk either in the microwave or a small saucepan, making sure that you do not let it come all the way to a boil as this will change the texture.
- Froth the steamed almond milk with a milk frother or by shaking it vigorously in a sealed container like a mason jar. Pour over the coffee and serve. Top with whipped cream or coconut whipped cream for a vegan option.
