Apple Coffee Cake
Ingredients:
For the coffee cake
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup sugar
- 1/2 cup salted butter, softened to room temperature
- 1/2 cup applesauce
- 3/4 cup milk (any milk)
- 2 tablespoons apple cider
For the streusel
- 2 tablespoons melted butter
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/2 cup brown sugar
- 2 large or 3 medium Granny Smith apples, peeled and roughly chopped*
For the apple cider glaze
- 1 cup powdered sugar
- 2-3 tablespoons apple cider
Instructions:
For the coffee cake
- Preheat the oven to 350 degrees F. and prepare a 9x9 baking pan. Spray the pan with cooking spray, add parchment paper and spray the parchment paper again. Alternatively, butter and flour the pan.
- Whisk together the flour, baking soda, baking powder and salt in a small bowl and set aside.
- Combine the milk and apple cider in a dish and set aside for 5 minutes. This will give the milk some time to start to curdle and will essentially make buttermilk.
- Use a mixer to cream together the butter and sugar until smooth and fluffy, about 2 minutes.
- Stir in the applesauce until smooth.
- Add flour mixture and the milk and cider mixture to the batter in 3 alternate additions, stirring just until fully incorporated after each.
- Make the streusel by stirring together the melted butter, cinnamon, nutmeg, cloves, brown sugar and apples.
- Spread half of the cake batter into the pan, using a spatula to level it out. Sprinkle half of the apple streusel evenly on top.
- Spread the remaining batter over the streusel and top with the remaining streusel.
- Bake at 350 degrees F. for 50-60 minutes until a toothpick comes out with just a few crumbs clinging to it. If the edges of your cake start to brown too quickly, place a piece of foil overtop.
For the apple cider glaze
- Stir together powdered sugar and apple cider, adding more cider as needed to get a drizzling consistency. You don't want it to just run off of the cake, but it should be smooth when drizzled off of a spoon.
- Drizzle the glaze over the slightly warm cake to serve.
