Apple Tarragon Chicken Salad

  1. Season the chicken well with salt and pepper. Place the chicken in a large frying pan with the apple cider vinegar and cook over medium heat. I did this just to get a little bit of the flavour from the vinegar in the chicken. I just left it in the pan until I was finished with everything else and ready to combine it all. It was about ten minutes.
  2. Bring the wine to a boil in a small saucepan. Add the red onions and tarragon and cook for 2-3 minutes until fragrant.
  3. Combine the chicken mixture, the onion mixture, and all other ingredients in a large bowl. Mix thoroughly and refrigerate for a couple of hours until ready to serve.
