Apple Tarragon Chicken Salad
Ingredients:
- 1 cooked rotisserie chicken (or see the note above), meat removed and shredded or cut into small pieces
- 1/2 cup apple cider vinegar
- Salt and pepper to season the chicken
- 1/2 small red onion, thinly sliced
- 1 Tablespoon chopped Tarragon
- 1/2 cup dry white wine or Vermouth (I always use Vermouth because I'm cheap, and I have always liked the flavour that results)
- 1/2 cup plain Greek yogurt
- 1/4 cup Miracle Whip
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Dash of hot sauce
- 1/2 cucumber, diced
- 1 apple, cubed
Instructions:
- Season the chicken well with salt and pepper. Place the chicken in a large frying pan with the apple cider vinegar and cook over medium heat. I did this just to get a little bit of the flavour from the vinegar in the chicken. I just left it in the pan until I was finished with everything else and ready to combine it all. It was about ten minutes.
- Bring the wine to a boil in a small saucepan. Add the red onions and tarragon and cook for 2-3 minutes until fragrant.
- Combine the chicken mixture, the onion mixture, and all other ingredients in a large bowl. Mix thoroughly and refrigerate for a couple of hours until ready to serve.
