Avocado Pesto Caprese Sandwich

Instructions:

  1. Preheat the oven to 400 degrees F (or use a panini grill if you have one).
  2. Meanwhile, make the balsamic reduction by combining the balsamic vinegar and honey in a small saucepan over medium heat.
  3. Bring to a boil and then reduce heat to low until thickened enough to coat the back of a spoon (about 3 minutes). Set aside.
  4. Make the avocado pesto by combining the avocado, basil, lemon juice, olive oil and garlic in a food processor or blender until smooth.
  5. Add salt and pepper to taste.
  6. Slice the ciabatta rolls and toast in the oven for 2-3 minutes.
  7. Remove the rolls from the oven, add a couple of slices of mozzarella cheese to the bottom of each and return to the oven for a few minutes on broil to heat the cheese.
  8. Remove from the oven and top the cheese with tomato slices, drizzle with the balsamic reduction. Spread the top of the sandwich with the avocado pesto.
