Avocado Pesto Caprese Sandwich
Ingredients:
- Ciabatta rolls (or your favourite bread - enough for however many sandwiches you want)
- Fresh mozzarella, sliced
- 1 tomato, sliced
- 1/4 cup balsamic vinegar
- 1 teaspoon honey
- 1 avocado
- 1/2 cup basil leaves
- Juice of 1 lemon
- 1/4 cup olive oil
- 1 clove garlic, minced
- Salt & pepper, to taste
Instructions:
- Preheat the oven to 400 degrees F (or use a panini grill if you have one).
- Meanwhile, make the balsamic reduction by combining the balsamic vinegar and honey in a small saucepan over medium heat.
- Bring to a boil and then reduce heat to low until thickened enough to coat the back of a spoon (about 3 minutes). Set aside.
- Make the avocado pesto by combining the avocado, basil, lemon juice, olive oil and garlic in a food processor or blender until smooth.
- Add salt and pepper to taste.
- Slice the ciabatta rolls and toast in the oven for 2-3 minutes.
- Remove the rolls from the oven, add a couple of slices of mozzarella cheese to the bottom of each and return to the oven for a few minutes on broil to heat the cheese.
- Remove from the oven and top the cheese with tomato slices, drizzle with the balsamic reduction. Spread the top of the sandwich with the avocado pesto.
