Baked Mint Chocolate Doughnuts
Ingredients:
For the doughnuts:
- 1/2 cup cocoa powder
- 1 1/4 cup flour
- 1/2 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup milk
- 1 teaspoon vanilla
- 1/2 teaspoon peppermint extract
- 2 teaspoons white vinegar
- 1/2 cup butter (melted)
For the white chocolate cream cheese frosting:
- 1 8 oz. package cream cheese, room temperature
- 4 ounces melted white chocolate
- 1 1/2 cups powdered sugar
- 2-3 drops peppermint extract (optional)
- Trader Joe's mint chocolate stars (optional for topping)
Instructions:
For the doughnuts:
- Preheat oven to 350 degrees F.
- Whisk together the cocoa powder, flour, sugar, baking soda and salt until combined.
- In a separate bowl, whisk together the egg, milk, vanilla, peppermint extract, vinegar and melted butter until combined.
- Add the dry ingredients to the wet ingredients, mixing just until combine.
- Pipe or spoon into a greased doughnut pan about 3/4 full.
- Bake at 350 degrees F. for 8-10 minutes until a toothpick comes out clean.
- Let cool completely before frosting. I usually let them cool for 2-3 minutes before removing them from the pan.
For the white chocolate cream cheese frosting:
- Combine all ingredients until smooth. You want it to be thick enough to spread on top of the doughnuts but not so runny that it slides right off so add some milk if it's too thick or add more powdered sugar if it's too thin.
- Spread the cooled doughnuts with frosting.
- I topped them with some of the mint chocolate starts from Trader Joe's because they are so cute, and I like the added crunch.
