Banana Bread 3 Ways
Ingredients:
- Coconut Banana Bread:
- 1/2 cup butter (1 stick)
- 1 cup sugar
- 2 eggs
- 1 Tablespoon coconut rum
- 3 - 4 bananas, mashed
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup sweetened, shredded coconut
- Chocolate Chunk Banana Bread:
- 1/ cup butter (1 stick)
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3 - 4 bananas, mashed
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup coarsely chopped chocolate (or chocolate chips)
- Maple-Bourbon Banana Bread:
- 1/ cup butter (1 stick)
- 1/2 cup sugar
- 1/2 brown sugar
- 2 eggs
- 1/4 cup maple syrup
- 1 Tablespoon bourbon
- 3 - 4 bananas, mashed
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
Instructions:
- Preheat oven to 350 degrees F.
- Cream together the butter and sugar.
- Add the wet ingredients and combine with a mixer until smooth.
- Add the remaining ingredients and mix together by hand until well-combined. Pour into a greased loaf pan and baked at 350 degrees F. for an hour or until toothpick comes out clean.
