Banana Chocolate Chip Muffins
Ingredients:
- 1/2 cup butter, softened
- 3/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 4 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 12 ounce bag semisweet chocolate chips
Instructions:
- Use a mixer to cream together the butter, sugar and vanilla until smooth and fluffy.
- Add the eggs, one at a time, beating after each until just combined.
- Whisk together the dry ingredients in a separate bowl.
- Add dry ingredients to the wet mixture in 3 alternating additions with the mashed bananas, mixing just until combined. It is for the batter to be lumpy and have some flour streaks. Do not over mix.
- Fold in the chocolate chips.*
- Let your muffin batter rest for 10-15 minutes while you preheat the oven to 350 degrees F and line a muffin tray with papers.
- Fill each muffin cup 3/4 of the way with batter. Bake for 20-25 minutes or until a toothpick comes out clean or with just a few crumbs stuck to it.
