Banana Chocolate Chip Muffins

  1. Use a mixer to cream together the butter, sugar and vanilla until smooth and fluffy.
  2. Add the eggs, one at a time, beating after each until just combined.
  3. Whisk together the dry ingredients in a separate bowl.
  4. Add dry ingredients to the wet mixture in 3 alternating additions with the mashed bananas, mixing just until combined. It is for the batter to be lumpy and have some flour streaks. Do not over mix.
  5. Fold in the chocolate chips.*
  6. Let your muffin batter rest for 10-15 minutes while you preheat the oven to 350 degrees F and line a muffin tray with papers.
  7. Fill each muffin cup 3/4 of the way with batter. Bake for 20-25 minutes or until a toothpick comes out clean or with just a few crumbs stuck to it.
