Caesar Buddha Bowls

Ingredients:

Instructions:

  1. Cook barley or other grain according to package directions.
  2. While the barley is cooking, spray a grill pan or other large pan with cooking spray and heat over medium heat.
  3. Add the chickpeas, kale and spices to the heated pan and cook until the kale is bright green, and the chickpeas are just starting to get crispy, 6-8 minutes.
  4. Put your bowl together by filling it up with the cooked barley, topping it with the grilled chickpeas and kale and other veggies.
  5. Drizzle with caesar dressing and sprinkle on some parmesan cheese to serve. Add a squeeze of lemon juice if you like.
