Caesar Buddha Bowls
Ingredients:
- 1 cup quick cooking barley or other grain such as farro or quinoa
- 1 (15.5 oz) can chickpeas, drained and rinsed
- 1 cup kale
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/2 cup cucumber, sliced
- 1-2 avocados, sliced
- 1/4 cup kalamata olives
- 1/2 cup cherry tomatoes, halved
- 1/4 cup shredded parmesan cheese
- Caesar dressing (recipe here)
- Parmesan cheese and lemon wedges, for serving
Instructions:
- Cook barley or other grain according to package directions.
- While the barley is cooking, spray a grill pan or other large pan with cooking spray and heat over medium heat.
- Add the chickpeas, kale and spices to the heated pan and cook until the kale is bright green, and the chickpeas are just starting to get crispy, 6-8 minutes.
- Put your bowl together by filling it up with the cooked barley, topping it with the grilled chickpeas and kale and other veggies.
- Drizzle with caesar dressing and sprinkle on some parmesan cheese to serve. Add a squeeze of lemon juice if you like.
