Cajun Shrimp and Rice
Ingredients:
- 1 tablespoon butter
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning (or you can make your own by combining dried oregano, salt, black pepper, and cayenne pepper like I did)
- 1 pound large shrimp, peeled and deveined
- Salt and pepper
- 4 Roma tomatoes, seeded and chopped
- 2 bunches green onions, chopped
- 1 1/2 cups COOKED white rice (I had to delay everything else because I didn't notice that the rice was supposed to be cooked ahead of time)
- 1/4 cup water
- 3 tablespoons chopped fresh parsley
- Lemon wedges
Instructions:
- Heat the butter, olive oil, and garlic in a large skillet over medium heat for about a minute. Add the Cajun seasoning (or spices) and shrimp and cook, stirring constantly, for another minute. Season with salt and pepper.
- Add the tomatoes and green onions to the skillet and cook, stirring constantly, for one minute. Add the rice and 1/4 cup water and continue to cook until the rice is warmed through and the shrimp are opaque, about 3 minutes. Stir in the parsley and serve with lemon wedges.
