Cheesy Soy Chorizo Pasta
Ingredients:
- 8 ounces ziti pasta
- 6 ounces soy chorizo
- 2 tablespoons butter
- 1 shallot (minced)
- 1 clove garlic (minced)
- 2 tablespoons fresh rosemary (finely chopped)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon red pepper flakes
- 1 tablespoon dried Italian seasoning
- 1 cup white mushrooms (sliced)
- 1 bell pepper (diced)
- 4 ounces goat cheese (I used garlic & herb, but regular is fine)
- 1/2 cup grated parmesan cheese
- 1/4 cup half & half
- Sliced green onions and shaved parmesan (for garnish)
Instructions:
- Cook pasta according to package instructions.
- While the water is boiling/pasta is cooking, prepare the sauce.
- Heat a large skillet over medium heat. Add the soy chorizo and cook for about 5 minutes, until it is starting to brown. Transfer to a bowl and cover with foil.
- Wipe out the pan and return to the heat.
- Melt the butter over medium heat. Add the shallot, garlic, rosemary, salt, pepper, red pepper and Italian seasoning. Cook for 3-4 minutes until shallot is translucent.
- Add the mushrooms and bell pepper and cook for another 3-5 minutes until the veggies are soft when pierced with a fork but not mushy.
- Add the goat cheese, parmesan and half & half.
- Stir until the cheese is all melted.
- Add the cooked pasta and soy chorizo, stirring to combine. Season with additional salt & pepper, if needed. Garnish with sliced green onions and shaved parmesan.
