Cheesy Soy Chorizo Pasta

Ingredients:

Instructions:

  1. Cook pasta according to package instructions.
  2. While the water is boiling/pasta is cooking, prepare the sauce.
  3. Heat a large skillet over medium heat. Add the soy chorizo and cook for about 5 minutes, until it is starting to brown. Transfer to a bowl and cover with foil.
  4. Wipe out the pan and return to the heat.
  5. Melt the butter over medium heat. Add the shallot, garlic, rosemary, salt, pepper, red pepper and Italian seasoning. Cook for 3-4 minutes until shallot is translucent.
  6. Add the mushrooms and bell pepper and cook for another 3-5 minutes until the veggies are soft when pierced with a fork but not mushy.
  7. Add the goat cheese, parmesan and half & half.
  8. Stir until the cheese is all melted.
  9. Add the cooked pasta and soy chorizo, stirring to combine. Season with additional salt & pepper, if needed. Garnish with sliced green onions and shaved parmesan.
