Cherry-Chocolate Chip Scones
Ingredients:
- 2 cups flour
- 3 1/2 tablespoons sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup butter
- 1 egg, beaten
- 1 cup cherries, pitted and sliced
- 4 tablespoons milk
- Heavy cream for brushing
- Demerara sugar for sprinkling
- Glaze:
- 3/4 cup powdered sugar
- 1 1/2 tablespoons milk
- 1 teaspoon vanilla
- 1/2 teaspoon almond extract (you could make this any flavour that you think goes with cherry and chocolat
Instructions:
- Preheat the oven to 400 degrees F.
- Mix together the flour sugar, baking powder, and salt in a bowl. Cut in the flour and combine with a pastry blender until a crumbly mixture forms.
- Add the egg, cherries, and milk and fold together with a spatula just until moistened.
- Pat the dough into a 1 to 2 inch-thick disk on a lightly floured cookie sheet.
- Brush the dough with heavy cream and sprinkle liberally with the Demerara sugar.
- Bake for 15-17 minutes or until a toothpick comes out clean. Let cool completely and then glaze if desired.
- Glaze:
- Combine all ingredients in a small bowl and drizzle over cooled scones.
