Cherry French Toast
Ingredients:
For the French toast
- 1/2 cup ricotta cheese
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla
- 4 slices thick sliced brioche, French or challah bread
- 1 egg
- 1/2 cup milk
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
For the cherry syrup
- 1/4 cup sugar
- 1 tablespoon corn starch
- Pinch of salt
- 1/3 cup juice from sour cherries
- 1 tablespoon butter
- 1/4 teaspoon almond extract
- 1 cup drained sour cherries
For the whipped cream
- 1 cup heavy cream
- 1 teaspoon vanilla
- 3 tablespoons sugar
Instructions:
For the French toast
- Whisk together the ricotta, sugar, and vanilla in a small bowl.
- Spread the ricotta mixture evenly onto 2 of the slices of bread and top with the remaining slices to form sandwiches.
- Whisk eggs, milk, nutmeg, and cinnamon together in a shallow dish. Dip sandwiches in egg mixture on each side.
- Heat a large skillet over medium heat and melt 1 tablespoon of butter in the skillet. Cook French toast for 3-5 minutes per side or until golden brown. Top with cherry syrup and whipped cream.
For the cherry syrup
- Start by combining the sugar, cornstarch, salt and cherry juice in a small saucepan over medium heat. Bring the mixture to a boil and cook for a couple of minutes until very thick, whisking constantly.
- Remove from the heat and stir in the almond extract and butter until melted and smooth. Serve on cooked French toast.
For the whipped cream
- Use a mixer to beat heavy cream until soft peaks form.
- With the mixer on low, slowly add vanilla and sugar. Turn mixer back to high and whip until stiff peaks form.
