Cherry Limeade Baked Doughnuts
Ingredients:
For the doughnuts:
- 1 cup flour
- 1/3 cup tablespoons sugar
- 3 tablespoons butter (softened)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup pureed sour cherries (can also use fresh or frozen)
- 1 egg
- 1 teaspoon vanilla
- Zest of 1 lime
- A couple drops of pink food coloring if you want
- 1/3 cup fresh cherries (pitted and roughly chopped)
For the glaze:
- 2 cups powdered sugar
- 1/4 cup lime juice
- Zest of 1 lime
Instructions:
For the doughnuts:
- Preheat oven to 350 degrees F and spray a doughnut pan with cooking spray.
- Combine the flour, sugar and butter with a mixer or spoon until the butter is well incorporated, and the mixture is crumbly.
- Stir in the baking powder and salt.
- Add pureed cherries, egg, vanilla and lime zest, stirring until smooth.
- Add food coloring if using and stir to blend.
- Fold in the chopped cherries.
- Spoon into the doughnut pan, leaving a little space at the top. If you only have one pan that fits 6 doughnuts, you will need to make two batches. Spray pan with cooking spray in between batches.
- Bake at 350 degrees F. for 10-12 minutes or until a toothpick comes out clean. Allow doughnuts to cool for a couple of minutes before turning them out on a cooling rack. Cool completely before glazing.
For the glaze:
- Stir all ingredients together until smooth. Add powdered sugar or water as needed to make the glaze runnier or thicker.
- Dip the cooled doughnuts in the glaze and sprinkle with some additional lime zest if desired.
