Cherry Limeade Pancakes
Ingredients:
For the pancakes
- 2 cups flour
- 2 tablespoons sugar
- Pinch of salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 eggs, lightly beaten
- 1 3/4 cup milk
- 2 tablespoons butter, melted and cooled slightly
- Zest of 1 lime
- 1 1/2 cup chopped cherries
For the syrup
- 1/2 cup maple syrup
- Zest of 2 limes
- Juice of 2 limes
Instructions:
For the pancakes
- Whisk together the flour, sugar, salt, baking powder and baking soda in a bowl and set aside.
- Whisk together the eggs, milk, melted butter and lime zest.
- Add dry ingredients to wet ingredients and stir just until combined. There will still be some lumps in the batter. Do not over mix.
- Stir in the chopped cherries now or sprinkle them on the pancakes while cooking if you prefer.
- Melt a little butter in a pan over medium heat.
- When the pan is hot, pour in 1/2 cup of the batter. Sprinkle chopped cherries on the pancake at this point if you didn't mix them into the batter already.
- When bubbles start to form and leave little craters in the pancake, it's time to flip it. The pancake should be golden brown on the first side when you flip it.
- Continue to cook the pancake for another minute or so until the second side is golden brown. Transfer to a plate and cover lightly with a kitchen towel until ready to serve.
For the syrup
- Combine all ingredients in a small saucepan over medium heat until warmed through. The microwave also works great for this.
- Serve pancakes with a drizzle of warmed lime maple syrup, fresh whipped cream and extra chopped cherries.
