Chewy Peanut Butter Cookies
Ingredients:
- 1 cup creamy, natural peanut butter*
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup butter, softened to room temperature
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/3 cup granulated sugar, for rolling
Instructions:
- Preheat oven to 350 degrees F. and line a couple of baking sheets with parchment paper.
- Using the paddle attachment in a stand mixer or a hand mixer, beat the peanut butter, sugars and butter until smooth and fluffy. This should take about 5 minutes. It should lighten in color and increase in volume.
- Add the eggs and vanilla and mix another minute until well incorporated.
- Add the flour, salt, baking soda and baking powder and mix just until combined. It is fine if there are some streaks of flour still. Do not over mix here. In fact, I prefer to just give it a quick stir rather than using the mixer for this part.
- Scoop the dough into 1 inch balls and roll in the extra granulated sugar until coated.
- Place the cookies about 2 inches apart on the prepared baking sheets and use a fork to press a criss cross pattern into the top of each.
- Bake for 7 minutes at 350 degrees F. Let them cool on the pans for about 5 minutes as they will continue to bake a bit, and then transfer them to the counter or a cooling rack. Take a bite when they are warm!
