Chili Lime Guacamole & Jackfruit Salad
Ingredients:
For the guacamole:
- 1 avocado (mashed)
- Juice of 1 lime
- 1/2 teaspoon chili powder
- 1/4 teaspoon paprika
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon garlic powder
- Salt & pepper (to taste)
For the salad:
- Mixed greens
- 1/4 cup satsuma mandarin slices (or whatever oranges are available)
- 1/4 cup pineapple chunks
- 1/4 cup halved cherry tomatoes
- 1/4 cup cubed pepperjack cheese (or whatever cheese you like or none at all to make it vegan)
- 1/2 cup chili lime carnitas jackfruit (look for Upton's Naturals brand in the section of your grocery store where they have tofu)
- Your favourite salsa + guacamole to use as the dressing for this salad
- Tortilla chips (for serving)
- Lime wedge (for serving)
- Cook jackfruit according to package directions (8-10 minutes in a pan.)
Instructions:
For the guacamole:
- Combine all ingredients in a small bowl with a fork or potato masher. I like guacamole to be a little bit chunky, but you can make it whatever consistency you like.
For the salad:
- Cook jackfruit according to package directions (8-10 minutes in a pan).
- Layer the mixed greens with the fruit, cheese and jackfruit. Spoon some salsa and guacamole on top and serve with tortilla chips and a lime wedge!
