Chipotle Chickpea Naan Pizza
Ingredients:
- 2 pieces naan (store-bought or homemade)
- 1/2 cup tomato sauce
- 1 tablespoon sriracha
- 1 tablespoon sauce from a can of chipotle peppers in adobo sauce
- 1/3 cup Boursin garlic & herb cheese (or other creamy, garlic cheese)
- 1/3 cup crumbled feta
- 1/2 cup chickpeas, drained and rinsed
- 1/2 red, orange or yellow bell pepper, thinly sliced
- 1 green onion, thinly sliced
- 1/4 cup cherry tomatoes, halved
- 1/2 jalapeno, thinly sliced (seeds removed if you like it less spicy)
- Fresh cilantro and plain Greek yogurt, for serving
Instructions:
- Preheat oven to 425 degrees F.
- Cook naan directly on the oven rack for 3 minutes per side.
- Meanwhile, make the sauce by stirring together the tomato sauce, chipotle sauce and sriracha.
- When naan has crisped up, remove from the oven and make your pizzas on a cookie sheet covered with parchment paper. Spread the sauce evenly on each piece of naan.
- Top with crumbled Boursin cheese, feta, veggies and chickpeas. Note that these pizzas work great with sliced, grilled chicken added as well if you want to add meat.
- Return to the oven and cook for 10 minutes.
- Serve with fresh cilantro and a little plain Greek yogurt on the side if you like. Cut into slices or squares and serve!
