Chocolate Chip Banana Bread
Ingredients:
- Chocolate Chip Banana Bread
- 1/2 cup butter, softened
- 1 teaspoon vanilla
- 3/4 cup sugar
- 2 eggs
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 4 medium bananas, mashed (I always use super ripe bananas that have been in the freezer for a while and just thaw them)
- 3/4 cup semisweet chocolate chips
Instructions:
- Preheat oven to 350 degrees F.
- Cream together the butter, vanilla and sugar using a hand mixer (or wooden spoon) until fluffy.
- Beat in the eggs, 1 at a time.
- Combine the dry ingredients in a separate bowl and add alternately with the mashed bananas to the sugar mixture.
- Fold in the chocolate chips. Pour the batter into a loaf pan and bake for 45 to 50 minutes, or until a toothpick inserted comes out clean. I covered the pan with foil after about 30 minutes so that the edges wouldn't burn.
