Chocolate Chip Cookie Ice Cream Sandwiches
Ingredients:
- Chocolate Chip Cookie Ice Cream Sandwiches
- 1 cup shortening
- 1 cup sugar
- 1/2 cup packed brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt (this is what makes this recipe so delicious)
- 1 package semi-sweet chocolate chips
- 2 containers vanilla bean ice cream
- 1 package mini chocolate chips
Instructions:
- Preheat oven to 375 degrees F.
- Combine the shortening, sugar, and brown sugar and cream with a wooden spoon or hand mixer.
- Add the eggs and vanilla, stirring until well-combined.
- Add the dry ingredients and mix until a cookie dough forms. Then add the chocolate chips and mix until they are evenly distributed throughout the dough.
- Drop by the tablespoonful onto a cookie sheet and bake for 8 to 10 minutes or until golden brown. I removed them a little bit early so they would be soft for the ice cream sandwiches.
- Assemble the Ice Cream Sandwiches:
- Let the vanilla ice cream soften slightly out on the counter before you put the sandwiches together. I did about one and a half large scoops for each sandwich.
- Lay the mini chocolate chips out on a plate or shallow dish and roll each sandwich until the outside is coated with them and voila!
