Chocolate Coconut Oatmeal cookies
Ingredients:
- 1/2 cup salted butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 cup oats
- 1 cup sweetened shredded coconut
- 8 ounces semisweet chocolate chips
Instructions:
- Preheat oven to 350 degrees F and line a couple of baking sheets with parchment paper.
- Cream together the butter and sugars with a mixer until light and fluffy, 5 minutes.
- Add the egg and vanilla, mixing 1 minute until smooth.
- Whisk together the flour, baking soda, baking powder and salt. Add dry ingredients to the wet ingredients, stirring just until combined.
- Add the oats, shredded coconut and chocolate chips.
- Scoop 1-inch balls of dough onto the cookies sheets and set a couple of inches apart.
- Bake at 350 degrees F. for 10-12 minutes or until edges are just starting to brown.
