Chocolate Orange Zucchini Bread
Ingredients:
- Zest of 2 oranges
- 1 cup sugar
- 1 cup brown sugar
- 1/2 cup butter, melted
- 1/2 cup milk
- 1/4 cup applesauce
- 3 eggs
- 1/4 cup orange juice
- 1 teaspoon vanilla
- 2 cups shredded zucchini
- 2 3/4 cups flour
- 3/4 cup cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 12 ounces chocolate chunks
- Optional, candied orange slices or glaze for topping (see blog post for instructions)
Instructions:
- Preheat oven to 350 degrees F. Grease and line two 9x5 loaf pans with parchment paper.
- Combine the orange zest and sugars, using your fingers to rub the zest into the sugar to bring out the flavor.
- Stir in the butter, milk, applesauce, eggs, orange juice and vanilla until smooth.
- Stir in the zucchini until evenly distributed.
- Add the dry ingredients, stirring just until combined (it's ok if there are some lumps still).
- Fold in the chocolate chunks.
- Divide evenly between the prepared loaf pans and bake at 350 degrees F. for 40-50 minutes or until a toothpick comes out clean.
