Chocolate Overload Cookies
Ingredients:
- 1/2 cup butter, softened to room temperature
- 1/2 cup vegetable shortening*
- 1 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cup flour
- 3/4 cup cocoa powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup white chocolate chunks or chips
- 1/2 cup semisweet chocolate chunks or chips
- 2 ounces dark chocolate, melted
Instructions:
- Cream together your shortening, butter and sugar in the bowl of a stand mixer (or using a hand mixer) for 5 minutes until light and fluffy.
- Add eggs and vanilla and mix for another minute.
- Add dry ingredients and mix just until combined.
- Stir in the chocolate chunks or chips.
- Line a pan with parchment paper and scoop cookie dough into 1 inch balls onto the pan. Place in the freezer for 10-15 minutes while you preheat then oven to prevent the cookies from spreading when baking.
- Heat oven to 350 degrees F.
- Place cookies a couple of inches apart on parchment lined cookie sheets and bake for 9 minutes.*
- Drizzle melted dark chocolate over the tops of the cookies and serve warm.
