Chocolate Peanut Butter Chia Pudding
Ingredients:
- 2 cups almond milk
- 1/2 cup chia seeds
- 1 teaspoon vanilla
- 1/4 cup maple syrup
- 1/4 cup honey
- 1/4 teaspoon salt
- 1/4 cup cocoa powder
- 1/4 cup peanut butter
Instructions:
- Combine chia seeds, almond milk, vanilla, maple syrup, honey and salt. Stir together and let sit for 5-10 minutes to thicken.
- Transfer half of the mixture to a blender and add the cocoa powder. Blend until smooth and pour into small cups, filling 2/3 of the way.
- Transfer the remaining half of the chia seed mixture to the blender and add peanut butter. Blend until smooth and pour on top of the chocolate pudding to fill the cups.
- Cover and chill for 2 hours or overnight.
- Serve with whipped cream, chopped peanuts and chocolate shavings.
