Chocolate Strawberry Baked Doughnuts
Ingredients:
For the doughnuts:
- 2 cups Kodiak Cakes dark chocolate flapjack & waffle mix
- 1/2 cup sugar
- 1 egg
- 1/2 cup milk
- 1 teaspoon vanilla
- 1 tablespoon white vinegar
- 1/2 cup butter (melted)
For the ganache and strawberries:
- 6 ounces chopped dark chocolate
- 1/2 cup heavy cream
- 1 tablespoon butter
- 1 1/2 cups sliced strawberries
- 1 tablespoon sugar
- 1 tablespoon water
Instructions:
- For the doughnuts:
- Preheat oven to 350 degrees F. and grease a doughnut pan.
- Whisk together the liquid ingredients.
- Add Kodiak Cakes dark chocolate mix and sugar to the liquid ingredients, stirring just until combined.
- Pipe or spoon the mixture into greased doughnut pan.
- Bake at 350 for 6-7 minutes or until a toothpick comes out clean. Let cool before frosting.
- For the ganache and strawberries:
- Combine the butter and heavy cream in a microwave safe bowl or small saucepan and heat until just starting to simmer and butter is melted (about a minute and a half in the microwave).
- Pour over the chopped dark chocolate and let sit for about 3 minutes.
- Stir until smooth and combined. Let cool for about 10 minutes.
- Spread ganache over cooled doughnuts.
- Combine sugar and water and microwave for 30 seconds to dissolve sugar.
- Toss with the sliced strawberries to glaze and layer on top of the ganache.
