Cilantro Lime Grilled Pork Chops
Ingredients:
- Juice of 3 limes
- 1 handful fresh cilantro
- 1/4 cup olive oil
- 1 clove garlic
- 1/4 teaspoon cayenne pepper
- 2 Tablespoons lowfat Greek yogurt
- Salt and pepper, to taste
- 4 thick-cut boneless pork chops, trimmed
Instructions:
- Put the lime juice, cilantro, oil, garlic, cayenne, yogurt, salt, and pepper into a blender.
- Combine into a smooth marinade. If you don't have a blender, just mince the garlic and the cilantro then whisk everything together in a small bowl.
- Pour about half of the marinade into a ziploc with the pork chops and marinate for about 2 hours in the fridge. Put the rest of the marinade into a container and store in the fridge for extra sauce to serve with the pork chops.
- Heat a grill pan over medium heat and coat with cooking spray. Cook pork chops for about 5 minutes per side or until done. Serve with remaining sauce.
