Cinnamon Sugar Apple Loaf Cake

Instructions:

  1. Preheat oven to 350 degrees F and line a loaf pan with parchment paper (use butter to make it stick).
  2. Whisk together the flour, baking soda, 1 tsp cinnamon, ginger, nutmeg, cloves, salt and 3/4 cup sugar in a medium bowl.
  3. Add the apples, tossing to make sure they are coated in the dry ingredient mixture. This will prevent them from sinking to the bottom of the cake.
  4. Combine the egg and applesauce in a small dish and add to the apple/dry ingredient mixture. Stir with a wooden spoon to combine.
  5. Pour the cake batter into the loaf pan, spreading with a spatula to even it out.
  6. Layer the thinly sliced 1/2 apple on top. Combine the remaining sugar and cinnamon in a small dish and then sprinkle overtop of the cake. This will form a really delicious crust on top of the cake.
  7. Bake at 350 degrees F. for 45 minutes or until a toothpick comes out clean. The middle will take longer to bake than the edges because of the apples layered on top. If it starts to brown too much around the edges, just add a little foil around the edges.
  8. Let the cake cool completely before removing it from the pan using the edges of the parchment paper. Slice and serve!
