Cookie Butter Cookies
Ingredients:
- 1/2 cup salted butter, softened
- 1 cup Speculoos cookie butter from Trader Joe's
- 1/2 cup sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 9 ounces chopped bittersweet chocolate bars or chocolate chips*
Instructions:
- Preheat oven to 350 degrees F and line a couple of cookie trays with parchment paper.
- Combine the butter, cookie butter, sugar and brown sugar in a large bowl with a mixer until smooth and creamy. This should take 2-3 minutes.
- Add the egg and vanilla and mix until combined and smooth, about 1 minute.
- Stir in the dry ingredients, just until combined.
- Stir in half of the chopped chocolate. Save the remaining half to put on top to get the melty chocolate you see in the pictures. If you don't care about the aesthetics, go ahead and stir in all of the chocolate in this step.
- Scoop the cookie dough into balls about 1 inch around and place a couple of inches apart on cookie sheets.
- Bake at 350 degrees F. for 7 minutes. Remove from the oven and press some of the chocolate that you saved into the tops of the cookies. Return to the oven for another 3 minutes or until edges are just starting to brown. If you don't want the chocolate on top, you can just bake the cookies for 10 minutes without that step.
